Happy July 4th

Hello Everyone.  I hope you had a wonderful Fourth of July. 
I never thought I would hear it, but my kids didn't want to go outside on the fourth because it was so hot.  They even chose watching a movie inside versus going to the swimming pool.  While we did manage a few runs through the sprinklers, playing on the trampoline, and watering the garden, it wasn't until the early evening that we really ventured outside to take advantage of the parades, festivals, and fireworks.  Unfortunately, that meant ...

Strawberry Romaine Salad

This yummy summertime salad is healthy, easy and delicious. It looks great too, making it a perfect dish to bring to potlucks or outdoor gatherings. Pair with a grilled chicken breast for a nutritious meal.

Dressing:

  • 1 cup vegetable oil
  • 3/4 cup sugar
  • 1/2 cup red wine vinegar
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground white pepper (can substitute black pepper)

Combine ingredients in a large jar. Cover tightly and shake vigorously. Chill until ready to serve.

Lemon-Raspberry Tarts

My in-laws were here visiting about a week ago and I love trying out new recipes on them. And luckily, they don't mind when I do! Here was a winner; the perfect sweet and tangy end to a meal which is also easy on your waistline at only 199 calories per serving. And best yet, a recipe that is so easy, but looks like you spent so much time preparing!

Ingredients:
